Hello, sweet friends!

Today, I’m sharing a recipe from my kitchen with yours —a creamy sundried tomato pesto pasta bake that’s as simple as it is soul-nourishing.

As a tradwife, I find such joy in cozying up in a roadside rental with a dish that’s made with love, a handful of pantry staples. This meal is all about high flavor with humble ingredients—perfect for a cozy evening at home or when you want to bless someone with a warm, homemade gift from your kitchen.

Can you taste - tender pasta shells cradling creamy ricotta layered with zesty sundried tomato pesto ground beef, all topped with a golden blanket of melted cheese?

It’s the kind of dish that fills your home with the most inviting aroma and brings smiles to every face at the table.

Let’s dive into this delightful recipe together—it’s easy enough for a busy day yet feels like a special occasion! A hearty meal for two to eat throughout the week, or enough to feed your crowd.

What You’ll Need:

  •  ½  - 1 ¾ -lb ground beef, browned and drained

  • 1 (16 oz) box medium pasta shells

  • 1 (24 oz) jar tomato basil sauce

  • 1 (6.7 oz) jar sundried tomato pesto

  • 2 large eggs

  • 1 (15 oz) tub ricotta cheese

  • 1 (8 oz) bag 6-cheese Italian blend, divided in half

  • A 9x11 baking dish

How to Bring This Dish to Life

  1. Prepare the Beef: Start by browning your ground beef in a skillet over medium heat. Once it’s cooked through, drain any excess fat and stir in the sundried tomato pesto.

Set it aside to let those flavors mingle.

  2. Cook the Pasta: Boil your medium shells according to the package, then drain and rinse them with cold water to stop the cooking. Pop them back into the pot, and gently fold in the ricotta cheese and half of the shredded Italian cheese blend. Stir until everything is creamy and combined.

  3. Add the Eggs: Crack your two eggs into a bowl, give them a good whisk, and then mix them into the pasta and cheese mixture. This little step adds such a lovely richness and helps everything hold together beautifully.

  4. Layer with Love: Preheat your oven to 350°F. Grab your 9x11 baking dish and spread about ½ to ¾ cup of the tomato basil sauce across the bottom—just enough to give the pasta a cozy bed. Spoon in your pasta mixture evenly, then layer that fragrant pesto-beef mixture on top, spreading it out to cover every nook. Pour the remaining tomato basil sauce over the beef, smoothing it out, and finish with the leftover shredded cheese.

  5. Bake to Perfection: Cover the dish with foil and bake on the center rack for 30-45 minutes, until it’s bubbling with joy. Then, remove the foil and switch your oven to broil at 525°F. Let it toast for 5-10 minutes—just keep a close eye so the cheese gets that perfect golden glow without overdoing it.

  6. Rest and Serve: Pull it from the oven and let it cool for 15-20 minutes. This patience pays off, letting all those flavors settle.

Serve it up with a crisp green salad, some warm garlic bread, or a side of steamed broccoli for a meal that feels like a hug.

A Little Twist:

Want to sneak in some extra goodness? Stir some shredded carrots and chopped spinach into the pasta-cheese mixture before layering. It’s a sweet way to add veggies without anyone blinking an eye!

This pasta bake is more than just a meal—it’s a chance to slow down, gather your loved ones, and savor the simple beauty of home-cooked food. I hope it brings as much warmth to your table as it does to mine.
