Nothing brings warmth and life to the kitchen quite like the inviting aromas of authentic, traditional home cooking.
Whether you are nourishing your man or a busy family after a long day or prepping ahead for the week, having versatile, whole-food recipes in your meal plan makes traditional homemaking both joyful and effortless.
Today, I'm sharing three distinct ways to serve up hearty, satisfying enchiladas using wholesome ingredients your family will love.
1. Traditional Flour Beef & Bean Enchiladas
For classic comfort food at its finest, you can't beat traditional flour enchiladas. Seasoned ground beef and hearty beans are rolled in soft flour tortillas, smothered in a rich, red sauce, and topped with generous layers of real cheese.
Baked in a dish until bubbly and golden brown, it’s a timeless simple favorite that feels like a warm hug at the end of the day.
Easy Beef Enchiladas
Prep time: 15 mins | Bake time: 35 mins | Servings: 4–6
Ingredients
1 lb ground beef
1 large onion, chopped
1 tsp cumin
½ tsp salt
½ tsp black pepper
Pinch of crushed red pepper
2 cans (15 oz each) mild chili beans
1 can (4 oz) mild diced green chilies
1 lb shredded cheddar cheese (4 cups, divided)
1 large jar (18 - 24 ounces) Ortega taco sauce
8 small flour tortillas
Instructions
Preheat: Set oven to 350°F.
Cook Meat: Brown ground beef in a skillet with cumin, salt, pepper, and red pepper. Remove beef from pan. Drain grease.
Sauté: Sauté onion in the same skillet until soft.
Filling: In a large bowl, combine cooked beef, onion, chili beans, green chilies, and 1 cup cheddar.
Prep Dish: Coat the bottom of a 9x13 baking dish with a thin layer of Ortega sauce.
Roll: Put ⅓ cup filling into each tortilla. Roll closed and place seam-side down in dish (4 per side).
Layer:
Drizzle Ortega sauce over rolled tortillas. Sprinkle with 1/4 cup of cheese.
Spread remaining filling mixture over the top sprinkle another 1/4 cup of cheese.
Pour remaining Ortega sauce over everything and around the edges.
Top with remaining 1/2 cup of cheddar cheese.
Bake: Cover with foil and bake for 25 minutes.
Uncover & Brown: Uncover and bake 10 more minutes.
Broil on low briefly until cheese is bubbly and golden brown. About 4 minutes.
2. Slow-Cooker Shredded Chicken Enchiladas
When your day is full of household projects, hand-crafting, or caring for your home, the slow cooker is your best friend. Tender chicken breasts simmer low and slow in a flavorful blend of spices and enchilada sauce until effortlessly shreddable. It’s a minimal-prep meal that fills your home with incredible cozy scents and delivers tender, juicy chicken every single time.
Slow-Cooker Shredded Chicken Enchilada Filling
Prep time: 10 minutes | Cook time: 6–7 hours (Low) or 3–4 hours (High) | Servings: 6
Ingredients
* 1.5 lbs boneless, skinless chicken breasts (or thighs)
* 1 yellow onion, finely chopped
* 1 large jar (18 - 24oz) Ortega taco sauce
* 1 can (4 oz) diced green chilies
* 2 can (15 oz) chili beans
* 1 tsp ground cumin
* pinch of crushed red pepper
* salt and black pepper, to taste
* 1 cup shredded cheddar cheese
For serving: Fluffy white or brown rice, or warm corn tortillas
Instructions
Layer the Crockpot: Place the chicken breasts in the bottom of the slow cooker. Top with chopped onion, green chilies, chili beans, cumin, salt, and pepper, pinch of crushed red pepper. Pour the jar of Ortega Taco sauce evenly over the top.
Slow Cook: Cover and cook on LOW for 6 to 7 hours (or HIGH for 3 to 4 hours) until the chicken is tender and easily pierces with a fork.
Shred & Combine: Remove the chicken onto a plate or cutting board, shred using two forks, and return it to the slow cooker. Stir well so the chicken absorbs all the rich sauce and seasonings.
Add Cheese: Stir in 1 cup of shredded cheese, cover for 5 minutes, and let it melt into the sauce.
Serve: Ladle generously over a warm bowl of rice, or serve hot with warm corn tortillas on the side.
3. Low-Carb Sweet Potato Enchilada Boats (Beef or Chicken)

Echillada style roasted sweet potatoes are an absolute dream.
Roasted halves serve as the perfect natural base for either your savory ground beef or shredded chicken filling. It offers all the rich, bold enchilada flavors you crave while keeping things naturally low-carb, whole-food centered, and deeply satisfying.
Low-Carb Beef & Sweet Potato Enchilada Boats
Prep time: 15 mins | Bake time: 40 - 50 mins total | Servings: 4 (8 halves)
Ingredients
4 medium sweet potatoes, sliced in half lengthwise
1 lb ground beef (or shredded chicken)
1 large onion, chopped
1 tsp cumin
½ tsp salt
½ tsp black pepper
Pinch of crushed red pepper
2 can (15 oz) mild chili beans
1 can (4 oz) mild diced green chilies
1 lb shredded cheddar cheese (4 cups, divided)
1 large jar (16 - 24 oz) Ortega taco sauce
Instructions
Pre-Roast Sweet Potato Halves:
Preheat oven to 400°F.
Slice sweet potatoes lengthwise into halves. Place them skin-side down on a parchment-lined baking sheet.
Roast for 30 - 45 minutes until tender when pierced with a fork, but firm enough to support the toppings.
Lightly mash the top surface of each potato half with a fork to flatten it slightly.
Cook Beef & Onions:
Lower oven temperature to 350°F.
Brown the ground beef in a skillet with cumin, salt, black pepper, and crushed red pepper. Remove beef from pan.
Sauté the chopped onion in the same skillet until soft.
Mix Filling:
In a large bowl, combine cooked beef or chicken, sautéed onion, chili beans, green chilies, and 1 1/2 cups of cheddar cheese.
Assemble & Bake:
Spread a thin layer of Ortega taco sauce on the bottom of a 9x13 baking dish.
Arrange the whole sweet potato halves cut-side up in the dish.
Mound the beef and bean mixture generously directly on top of and around the sweet potatoe halves.
Pour remaining taco sauce over the top, and along the sides of the baking dish then cover with the remaining cheddar cheese.
Cover with foil and bake at 350°F for 25 minutes until heated through.
Uncover and bake for an additional 5 minutes (or broil briefly) to get the cheese bubbly and melted.
Homemakers Tip: This base filling is perfect for batch cooking! Prepare a double portion in your crockpot, then bake one half as a traditional casserole tonight and use the remaining filling to top roasted sweet potatoes for an easy, prepped lunch tomorrow.
