You'll create 50 irresistibly delicious truffles, coated in chocolate and optionally dusted with cocoa or powdered sugar, that will become your new go-to treat!

List of Ingredients

  • 2 cups heavy cream

  • 4 tablespoons instant coffee granules (adjust based on your preferred coffee strength)

  • 16 oz high-quality dark chocolate (chopped finely)

  • 4 tablespoons unsalted butter (softened)

  • 2 teaspoons vanilla extract

  • 16 oz dark or milk chocolate (for coating)

  • Cocoa powder or powdered sugar (optional, for dusting)

Time Line

  • This recipe will take about 4 to 5 hours total

  • 15-20 minutes to prepare the ganache and mix in ingredients

  • 2-3 hours to chill the ganache until firm

  • 30 minutes to shape the truffles

  • 15-20 minutes to prepare the chocolate coating

  • 30 minutes to coat and add finishing touches

  • 30 minutes for the truffles to set

Keep in mind that most of the time is for chilling and setting, so the hands-on work is relatively quick and easy!

Step 1: Prepare the Coffee Ganache

Heat the Cream and Coffee: In a saucepan, heat 2 cups of heavy cream over medium heat until it just begins to simmer. Add 4 tablespoons of instant coffee granules, stirring until dissolved.

Tip: Avoid boiling the cream—it should be hot but not bubbling, as boiling can affect the ganache texture.

Melt the Chocolate

Pour the hot cream mixture over 16 oz of finely chopped dark chocolate in a bowl. Let it sit for 2-3 minutes to soften the chocolate, then stir until the mixture is smooth and glossy.

Tip: Use high-quality chocolate for a richer flavor. Stir gently to avoid air bubbles for a silkier ganache.

Add Butter and Vanilla

Stir in 4 tablespoons of softened butter and 2 teaspoons of vanilla extract until fully combined.

Tip: Butter adds creaminess, so ensure it’s fully incorporated for that smooth, melt-in-your-mouth texture.

Step 2: Chill the Ganache

Transfer the ganache mixture to the fridge for 2-3 hours until it’s firm but still workable.

Tip: For a firmer texture faster, you can place it in the freezer for about 45 minutes, but keep an eye on it so it doesn't freeze solid.

Step 3: Shape the Truffles

Use a spoon or small scoop to portion the ganache into 1-inch balls, aiming for 50 truffles. Roll each one between your palms to smooth them out.

Tip: Lightly dust your hands with cocoa powder or wear gloves to prevent the ganache from melting from the warmth of your hands.

Place the truffles on a lined baking sheet and refrigerate for another 30 minutes to firm up before coating.

Step 4: Prepare the Chocolate Coating

Melt 16 oz of dark chocolate in a double boiler (or microwave in short intervals, stirring between each).

Tip: For a glossy finish, temper the chocolate by heating it gently to around 115°F (46°C), then cooling it down to 90°F (32°C) before dipping.

Step 5: Coat the Truffles

Take the chilled truffles and dip each one into the melted chocolate using a fork or dipping tool. Let any excess drip off before placing them back onto the lined baking sheet.

Tip: For a cleaner coating, tap the fork gently on the edge of the bowl to shake off excess chocolate.

Step 6: Add Finishing Touches

Optionally, dust the freshly coated truffles with cocoa powder or powdered sugar, or get creative by sprinkling crushed nuts or drizzling white chocolate over the top.

Tip: If you want contrasting textures, roll the truffles in toasted coconut or crushed cookies for a gourmet finish.

Step 7: Set the Truffles

Let the coated truffles set completely at room temperature, or pop them in the fridge for quicker results.

Tip:* For the best flavor, store your truffles in an airtight container in the fridge, but serve them at room temperature to enjoy the full richness of the ganache.
